Day 10 Chili Part Deux

This one is sheer yum! Today no temptations tried to lure me as I really was looking forward to this uber-easy and delish dish.  I remembered a recipe I found a while back in my Trader Joe's Fearless Flyer for a Chili Cornbread Casserole. Originally, I made it with TJ's Turkey Chili. But tonight, I had leftover Three Bean Chili Mole (see Day 7 for the recipe) and a plan...
I put 4 cups of the leftover chili (plus a tad because it looked so good) in a 9x13 baking dish. I prepared Trader Joe's Cornbread Mix according to the directions. I spooned the  prepared batter over the chili and popped the casserole in a preheated 350 degree oven for 35 minutes. 30 may do but my cornbread was not set at 30 minutes. I suppose any cornbread mix would work but I gotta make a pitch for the TJ's brand. It is the best by far. Love it. Just sweet enough with nice kernels of corn. Way too easy, way too good. I served a hearty dinner that didn't feel like Part Deux at all!
