So not long before the holidays, I was watching some guilty pleasure TV...you know, the 'reality' show about that great chef Kendra? OK, it wasn't a show about cooking nor is she, by her own admission, able to cook (she is actually the former girlfriend of Hugh Hefner). But to prove to me that great ideas come when and from where you least expect them, there it was...
the answer to my Christmas dinner issue which was that I had one large oven, one large turkey and seemingly 50 side dishes to cook. What was I to do? And then Kendra was before me with the answer. It was as if angels sang from the sky. There it was on her counter...a large roaster. I had never seen or used one before but I had my answer. A little online research and off to Sears (the only place that had one in stock). That very day I had my gorgeous red Nesco roaster. Voila! The best Christmas turkey I ever cooked. So, having read online that the biggest drawback was storage (it is huge), I decided to find ways to use it rather than store it away. It holds two whole chickens and cooks them to perfection. I rub the chickens with a mix of olive oil, a tad butter, a splash Gravy Master browning sauce, and Trader Joe's 21 Seasoning Salute. Gorgeous! Tonight, I roasted some red potatoes seasoned with olive oil, dijon mustard and fresh rosemary to serve alongside with some fresh broccoli. It looked much more complicated than it was. A simple dinner really. But delicious. Recommend...totally. Thanks Kendra!
