It's highly unlikely that da Vinci was thinking of soup and sandwich when he said that, but it applies here. After three days of dining out and celebrating holiday and vacation days, it was time to return to cooking...
And regaining my new enthusiasm for doing so. I literally threw the ingredients for this soup in the crockpot as I flew out the door to work. I pieced together a few recipes and it turned out great. The soup steamed in a mug alongside a simple Caprese Sandwich with balsamic vinaigrette drizzle over mozzerella, sliced tomatoes and basil leaves on a crisp baguette. Nice. No muss, no fuss and all good.Crockpot Sweet Potato Soup
3 sweet potatoes, peeled and diced
3 cups sliced carrots
1/2 cup diced onion
4 1/2 cups vegetable broth
1/2 t. curry powder
1/2 t. kosher salt
1/2 t. white pepper
1/2 t. cinnamon
1/2 t. ground ginger
1 cup heavy cream
Place all ingredients except cream in crock pot. Stir. Cook on low for 8 hours. Puree in crock pot with an immersion hand blender. Add cream. Stir. Cover and heat through.
