Day 3 Surprise, surprise,surprise...

Yay! Day 3...and it held three surprises...
Surprise #1...crisp cooked fresh green beans taste good even without butter. Surprise #2...cauliflower really can take the place of potatoes on the plate without feeling like I sacrificed. Surprise #3...garden protein "chicken" is good...and sometimes good is good enough!
OK, I forgot the picture bit until midway through my meal...but you get the idea. A pretty plate that revved my appetite. Tonight, I did have a snack of the leftover bean dip and red pepper strips when I first arrived home. The cauliflower (recipe below) was easy to throw together and took 45 minutes to bake. Enough time for a warm shower and catching up on my email. The beans gloriously came from Fresh and Easy in a microwave cooking bag. 3 minutes and done. The "chicken" I chose were Gardein Tuscan Breasts. A whopping 22 g of protein and 2.5 g of fat. And they taste good! Really, really close to chicken in texture and taste. My second and third bites were more enjoyable. This IS a journey after all and this is all new to my taste buds! My husband enjoyed them as well...shocker. So, all in all a success. And, I must admit, I do feel a sense of satisfaction and success. AND I don't feel as overly full...but very satisfied. The recipe for the cauliflower is below. Enjoy!!

Baked Goudaflower

1 large fresh cauliflower
1/2 cup water
2 T. butter, melted
Gouda - shaved or slices
1/2 cup dried bread crumbs
1/2 cup parmesan cheese - grated
Salt and pepper to taste
Break off cauliflower florets. Arrange in 11x7 baking pan. Pour over 1/2c. water and melted butter. I used sliced gouda which I had on hand and broke into pieces which I layed on top of the florets. Sprinkle bread crumbs over. Sprinkle parmesan over. Salt and pepper to taste. Seal pan tightly with foil. Bake in a 375 degree oven for 45 minutes.
